A comforting and easy recipe for Spinach and Ricotta Stuffed Shells that the whole family will love.

Ingredients

  • 12 large jumbo pasta shells
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to package instructions until al dente, then drain and set aside.
  3. In a mixing bowl, combine spinach, ricotta, 1/2 cup mozzarella, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper.
  4. Stuff each cooked shell with the cheese mixture.
  5. Spread half of the marinara sauce on the bottom of a baking dish.
  6. Place the stuffed shells in the dish and cover with the remaining marinara sauce.
  7. Sprinkle the remaining mozzarella on top.
  8. Bake for 25-30 minutes or until cheese is bubbly and golden.
  9. Let cool for 5 minutes before serving.

Notes

  • For a creamier texture, add more ricotta cheese.
  • Can substitute spinach with kale or other leafy greens.
