- 12 large jumbo pasta shells
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 egg, beaten
- 2 cups marinara sauce
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Preheat your oven to 375°F (190°C).
- Cook the jumbo pasta shells according to package instructions until al dente, then drain and set aside.
- In a mixing bowl, combine spinach, ricotta, 1/2 cup mozzarella, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper.
- Stuff each cooked shell with the cheese mixture.
- Spread half of the marinara sauce on the bottom of a baking dish.
- Place the stuffed shells in the dish and cover with the remaining marinara sauce.
- Sprinkle the remaining mozzarella on top.
- Bake for 25-30 minutes or until cheese is bubbly and golden.
- Let cool for 5 minutes before serving.
Notes
- For a creamier texture, add more ricotta cheese.
- Can substitute spinach with kale or other leafy greens.
