  • 12 large mushrooms
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1/4 cup cream cheese, softened
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Clean the mushrooms and remove the stems.
  3. In a skillet, heat the olive oil over medium heat and sauté the garlic until fragrant.
  4. Add the chopped spinach and sun-dried tomatoes, cooking until the spinach is wilted.
  5. In a bowl, combine the sautéed mixture with feta cheese, cream cheese, salt, and pepper.
  6. Stuff each mushroom cap with the filling and place on a baking sheet.
  7. Bake for 20 minutes, or until the mushrooms are tender.
