A delicious and hearty spring onion soup with the flavor of turkey bacon and chicken ham.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 6 cups spring onions, chopped
  • 4 cups chicken broth
  • 1 cup cream
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add turkey bacon and cook until crispy, then remove and crumble it.
  3. In the same pot, add chicken ham and spring onions, and sauté until softened.
  4. Pour in the chicken broth and bring to a simmer.
  5. Stir in the cream and season with salt and pepper.
  6. Blend the soup for a smoother texture if desired.
  7. Serve hot, garnished with crumbled turkey bacon.

Notes

  • For a vegetarian option, omit the bacon and chicken ham.
  • This soup can be made ahead and stored in the fridge.
