A rich and moist strawberry cheesecake pound cake recipe that combines the flavors of classic strawberry cheesecake with a tender pound cake.

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, blend the cream cheese, sour cream, and vanilla. Add this to the butter mixture.
  5. Incorporate the flour, baking powder, and salt, mixing until just combined.
  6. Gently fold in the chopped strawberries.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
