Ingredients

  • 1 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup lemon curd for filling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the sugar and butter until light and fluffy.
  3. Add the egg, lemon juice, and lemon zest and mix well.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients until a dough forms.
  6. Take a small portion of dough, flatten it in your hand, place a teaspoon of lemon curd in the center, and fold the dough over to seal.
  7. Place on a greased baking sheet and bake for 10-12 minutes or until lightly golden.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For a stronger lemon flavor, add more lemon zest.
  • These cookies can be dusted with powdered sugar before serving.
