A delicious and comforting stuffed pepper casserole made with beef.

  • 1 cup rice
  • 2 bell peppers
  • 1 can diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese

Instructions

  1. Brown the ground beef in a skillet over medium heat.
  2. Add the rice and stir until combined.
  3. Chop the bell peppers and add to the mixture.
  4. Stir in the diced tomatoes and seasonings.
  5. Transfer to a baking dish, top with cheese, and bake for 25 minutes at 350°F.

Notes

  • For extra flavor, add some Worcestershire sauce.
  • Feel free to use any color of bell pepper.
