A warm, hearty tomato soup infused with the rich flavor of turkey bacon, perfect for chilly days.

Ingredients

  • 6 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cans (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon sugar
  • Salt to taste
  • Pepper to taste
  • 1/4 cup heavy cream (optional)

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. In the same pot, sauté onion and garlic until fragrant.
  3. Add diced tomatoes, chicken broth, basil, sugar, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Blend the soup until smooth, return to pot, and stir in the chopped turkey bacon and cream if using.
  6. Heat through and serve hot.

Notes

  • For a vegan option, omit the turkey bacon and use vegetable broth.
  • Feel free to add other spices like oregano or thyme for more flavor.
