  • 4 slices turkey bacon
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 cup small pasta (like ditalini)
  • 2 cups kale, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. Add the onion and garlic to the pot, sautéing until softened.
  3. Stir in the white beans, chicken broth, diced tomatoes, oregano, and thyme. Bring to a boil.

  5. Stir in the kale and cook until wilted.
