Tuscan Style Chicken Soup is a hearty and comforting dish that combines the rich flavors of chicken and turkey bacon, perfect for a cozy meal.

  • 1 pound chicken breast
  • 4 slices turkey bacon
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups kale, chopped
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy, then remove and set aside.
  2. In the same pot, add onions, carrots, and celery. Sauté until the vegetables are tender.
  3. Add garlic and cook for another minute until fragrant.
  4. Stir in the chicken broth, chicken breast, thyme, oregano, and diced tomatoes. Bring to a boil.
  5. Reduce heat and let it simmer until the chicken is cooked through, about 20 minutes.
  6. Remove the chicken, shred it, and return to the pot. Add kale and cook until wilted.
  7. Season with salt and pepper to taste, and serve with crumbled turkey bacon on top.

Notes

  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
  • Feel free to add other vegetables like zucchini or bell peppers.
