  • 2 cups cooked, shredded chicken
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups spinach
  • 1 cup cooked pasta (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in the garlic and cook for another minute.
  4. Pour in the chicken broth and add the shredded chicken, diced tomatoes, basil, oregano, salt, and pepper.
  5. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  6. Add the spinach and cooked pasta, if using, and cook for an additional 5 minutes.

Notes

  • For a heartier soup, add more vegetables.
