- 2 cups cooked, shredded chicken
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 can diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups spinach
- 1 cup cooked pasta (optional)
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, and celery. Cook until softened, about 5 minutes.

- Pour in the chicken broth and add the shredded chicken, diced tomatoes, basil, oregano, salt, and pepper.
