A delicious and healthy twist on traditional lasagna, featuring layers of zucchini instead of pasta.

Ingredients

  • 3 medium zucchinis
  • 1 pound ground turkey
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a skillet, cook the ground turkey until browned and cooked through.
  4. Add marinara sauce to the cooked turkey and stir to combine.
  5. In a bowl, mix ricotta cheese, egg, Italian seasoning, garlic powder, salt, and pepper.
  6. In a baking dish, layer zucchini strips, turkey mixture, ricotta mixture, and mozzarella cheese.
  7. Repeat layers until all ingredients are used, finishing with mozzarella cheese on top.
  8. Bake for 30 minutes until bubbly and golden.

Notes

  • For an extra cheesy version, add more mozzarella on top.
  • You can add sautéed vegetables for more flavor.
